Lemon Lavender Collagen Energy Balls

This time of year, I'm always reluctant to recognize that summer is coming to an end. So today I'm sharing one of my favorite simple recipes that incorporates some of my favorite summer flavors. These energy balls serve as a great pre- or post-workout snack, take less than 10 minutes to make and will keep in the refrigerator for several days!

 1 cup pitted medjool dates
 1 cup cashews
 3 scoops powdered collagen peptides (I used Garden of Life)
 2 tbsp chia seeds
 ¼ cup hemp seeds
 1 tsp coconut oil (room temperature)
 2 tbsp culinary lavender
 zest of one medium lemon
 juice of one medium lemon

Combine all ingredients in food processor until well combined. Roll into small balls and let cool in refrigerator for ~30 minutes.
